Spinach & Cheese Ravioli with Sauteéd Spinach & Roasted Pine Nuts in Brown Butter Sauce
The brown butter adds nuttiness and a depth of flavor. This wonderfully elegant dish is definitely company-worthy!
1 Package Louisa Spinach & Cheese Ravioli
¼ cup pine nuts
2 cups spinach
4 tbsp. butter
Salt and pepper (to taste)
Parmesan cheese (to taste)
Heat large covered saucepot of unsalted water to boiling over high heat. Add Louisa Spinach & Cheese Ravioli; stir gently. Reduce heat to medium and cook, uncovered, 5 minutes. Drain ravioli and set aside.
Peel and thinly slice shallot. In large skillet, begin browning butter. When it starts to become golden, sauté shallot and pine nuts. Stir in spinach and cook down.
Fold ravioli into skillet until they are evenly coated with brown butter sauce. Top with grated Parmesan cheese. Plate and serve immediately.
