Beef & Pork Cannelloni with Smoked Cheese and Tomato Sauce
Baked cannelloni is darn delicious, but can be time consuming if you make it from scratch. Louisa to the rescue! This hearty dish is easy to make, but tastes like you spent hours in the kitchen. Plus it's kid-friendly. A plate-cleaning win-win!

Ingredients
8 Louisa Beef & Pork Cannelloni
1 can (14½ ounces) fire-roasted diced tomatoes
2 large garlic cloves, crushed with press or minced (about 1 tbsp.)
½ cup water
1 tbsp. tomato paste
1 tsp. Italian seasoning or dried oregano
½ tsp. smoked sweet paprika (optional)
8 ounces smoked Fontina, smoked provolone or smoked mozzarella cheese, 4 oz. chopped into ½ chunks, 4 oz. coarsely shredded
Directions
Preheat oven to 375°F.
In medium bowl, stir together undrained tomatoes, garlic, water, tomato paste, Italian seasoning, and paprika.
Spread ¾ cup tomato mixture in bottom of glass, ceramic or metal 13" x 9" baking dish. Arrange Louisa Beef & Pork Cannelloni in dish with space between cannelloni.
Spread chopped cheese chunks around cannelloni. Spread remaining tomato mixture over cannelloni and cheese. Sprinkle coarsely shredded cheese on top.
Cover dish tightly with aluminum foil. Bake 25 minutes. Remove foil and bake 5 minutes longer. Let stand 5 minutes
