Bacon Mac & Cheese Bites Kids Meal with Cheddar Ranch Dipping Sauce

Ingredients (1 servings):

  • 1 apple, cut into slices
  • 12 baby carrots
  • 5 Bacon Mac & Cheese Bites


Arrange apple slices and carrots onto plate. Deep fry Mac & Cheese Bites at 350ºF for 3-4 minutes. Plate and allow to cool before serving.

Bacon Mac & Cheese Bites with Chorizo and Sweet & Spicy Dipping Sauce

Ingredients (4 servings):

  • 5 Mac & Cheese Bites
  • 1 large link chorizo sausage, sliced
  • 3/4 cup pineapple juice
  • 2 tsp ketchup (or Australia/UK tomato sauce)
  • 2 tsp+ hot sauce of choice (Franks etc, adj to taste)
  • 2 tbsp brown sugar , packed
  • 1 garlic clove , finely chopped or minced
  • 1/4 tsp salt
  • Pepper
  • 1 1/2 tsp cornflour / cornstarch
  • 1 tbsp water or pineapple juice


Mix together Sauce in a bowl, then mix together thickener in a small bowl. Simmer Sauce for 3 minutes. Add thickener and mix quickly, then simmer for 45 seconds to 1 minute until thickened. Slice chorizo into slices and fry over medium heat until browned. Deep fry Mac & Cheese Bites in 350ºF oil for 3-4 minutes.

About the Dish:

“Chorizo likely originated in Catalonia. In addition to Mexican and Spanish cooking, chorizo is also used regularly in Portuguese, Puerta Rican, Panamanian, South American, and Filipino cooking. Chorizo is usually seasoned with smoked paprika and peppers, which gives this sausage its red tint.”

Bacon Mac & Cheese Bites with Tomato Bisque

Ingredients (4 servings):

  • 24 mac and cheese bites
  • 8 Grape or cherry tomatoes
  • 1 cup heavy cream
  • 2 tbsp buttermilk
  • 2 San Marzano tomatoes, canned
  • 1 small onion , quartered
  • 1 carrot, halved
  • 1 celery stalk halved
  • 6 fresh basil leaves
  • 1 garlic clove whole
  • 3 tbsp extra virgin olive oil
  • Crumbled bacon for garnish


Combine heavy whipping cream and buttermilk, cover and let sit at room temperature for 12-16 hours. Stir in and refrigerate. Puree San Marzano tomatoes until smooth then strain to a fine sieve to remove seeds. Sweat onions, carrots, celery and garlic with olive oil in a pot. Add San Marzano tomatoes and bring to a simmer. Add basil and steep for 15 minutes. Season to taste. Strain solids out of the soup. Fry Mac & Cheese Bites at 350ºF for 3-4 minutes and skewer with grape tomatoes. Serve atop tomato bisque.
