Sliders & Toasted Sausage Ravioli

Ingredients (4 servings):

  • 5 toasted ravioli
  • french fries
  • 5 mini hamburgers
  • 1 tomato, sliced
  • 1 small red onion, sliced
  • lettuce
  • ciabatta bread sliders
  • ketchup

Directions:

Grill mini burgers to desired temperature. Brush ciabatta bread with oil and grill side down. Assemble sliders with tomatoes lettuce and red onions. Fry toasted ravioli then skewer them with frill picks and place on top of the sliders. Serve immediately with fries

About the Dish:

“Italian Sausage or “Salsiccia” is made with pork and the seasoning varies accordingly to the regional Italian cuisine. In the United States, the Italian sausage is widely recognized as a combination of pork meat and fennel or anise seasoning primarily. It is usually found in stores with 2 variations, sweet and spicy.”

Toasted Sausage and Cheese Ravioli with Pizza Sauce

Ingredients (4 servings):

  • 24 toasted ravioli
  • 2 cups whole canned tomatoes, crushed
  • 1 garlic clove, shaved
  • 1 tbsp. dried oregano
  • 1/4 cup of dry white wine
  • 1/4 cup olive oil
  • TT fresh basil
  • TT salt and black pepper
  • TT fresh parsley
  • TT Parmesan cheese (optional)

Directions:

Heat olive oil and sauté garlic briefly, add white wine and reduce fold in tomatoes and heat to a simmer. Place oregano, whole washed basil with stems and allow steeping. Reduce for 10 minutes, remove basil and season to taste. Serve with toasted ravioli and finish with chopped fresh parsley and parmesan cheese to order. Toasted Ravioli goes well with your favorite pizza.

“The New York pizza market was once strongly controlled by the Mafia under the infamous Al Capone who owned a Wisconsin based dairy farm. Almost any pizzeria selling by the slice was forced into using inferior quality processed mozzarella by threat of being burned down. Only a few select parlors with shop owners typically from Naples were permitted to use authentic locally produced cheese if they agreed not to sell by the slice.”

Toasted Sausage Ravioli with Pepper Jack Dipping Sauce

Ingredients (4 servings):

  • 24 toasted ravioli
  • ½ cup heavy whipping cream
  • 10 oz pepper jack cheese (shredded)
  • 1 small can pimento (diced)
  • ¼ cup heavy whipping cream
  • 6 oz sharp cheddar (shredded)

Directions:

In double boiler bring the ¼ cup of heavy whipping cream to 165°F then add sharp cheddar and blend until melted. In double boiler bring the remaining whipping cream to 165°F and add pepper jack cheese. Stir until melted then place in serving dish. Place in squirt bottle. Top pepper jack cheese sauce with cheddar sauce add diced roasted red peppers.

About the Dish:

“Pimento also known as a cherry pepper is a chili pepper similar in appearance to a smaller red bell pepper. The flavor of this pepper is more sweet and aromatic than a regular red bell pepper and is traditionally used to stuff Spanish green olives, like those found in a vodka or gin martini.”
